As you can see from the data above, when given an updated application that can run native on the new Intel chips, the Intel iMac will provide you with much more processing power. As you can also see Photoshop running on top of Rosetta, is a slowpoke on the Intel machine. The applications you use will probably run somewhat faster on the Intel iMac than on the current machines you are using, though they will run about half as fast as they could run on the G5 iMac. This of course will change once your applications are retooled to run natively on the Intel chip. Most likely that will occur sometime this year.
The Intel iMac is the forward looking machine. It is also much more flexible, having essentially two processors that will put gobs of Power at your disposal. If you have a strategy to harness all that Power, it may even keep up with the G5 in overall productivity, even in applications that have not been retooled for the Intel chip .... A multitasking strategy.
Given the choice between these two machines, we are hard put to find a good reason to recommend the G5. It might enjoy a brief period of performance advantage in some cases, but it will soon be overtaken by the Intel machine. This is even more true if you plan to hold onto the machines for a prolonged period of time.
There is a caveat. My understanding is that the applications you listed will all run on Rosetta, but you should check with the manufacturer, or Apple, to make sure the will run without problems.
You might want to wait to upgrade until your applications are ready for Intel, but we would recommend giving the G5 a pass.

I am contemplating purchasing a few new IMacs for our company.
We currently use G4 PowerPC's, 733 MHz, and 1 gig RAM.
Our debate is whether to purchase the iMac G5, 2.0 with the 20" monitors (iSight) and not have to contend with Rosetta, or the new Intel Core Duo iMac, 2.0Ghz, 20" monitor.
Whatever we buy, we tend to live with for many years, as you can see from what we are currently working with.
We are a graphics design and printing company using mainly Quark 6.5, Creative Suite 2, FreeHand 10, and Office 2004.
