Hi Thomas,
We do not test with FCP, but we do test with iMovie, which is similar. FCP is not yet tuned to take advantage of the Intel processor in the iMac, so comparatively it will run slower on that machine compared to a similarly clocked dual processor G5 machine. This will change once Apple gets FCP up to speed for the new chip sometime this year. For the most part a dual processor G5 machine running FCP should run at a similar clip to a similarly configured Intel one (once the software runs native on Intel).
Our current attitude to multiprocessor machines is this. They provide greater flexibility in the workplace, but, unless you are in a production type environment, you may have trouble soaking up all the performance that these machines make available. If your work style is one that will make continuous, and multiple simultaneous demands on the processing capacity of the machine, a multiprocessor machine will definitely get you there faster.
One thing to keep in mind is that Apple is scheduled to release an Intel based Power Mac sometime this year.
